What little millet flakes are
Whole little millet is cleaned, steamed and pressed flat between rollers. Nothing added, nothing stripped out. The same grain, pre-cooked and flattened so it rehydrates in a couple of minutes.
Because samai starts as such a fine grain, the flakes come out thinner and more delicate than any of our others.
The one for smooth textures
Samai flakes don't hold their shape the way jowar or kambu do — they break down and turn creamy. That's a limitation for poha and a real advantage everywhere else: kheer, porridge, payasam, anything you want to thicken without adding flour.

How to use it
Milk bowl — soak 1 cup flakes in warm milk 3 minutes with jaggery and fruit. The fastest breakfast in our range.
Porridge — simmer 1 cup flakes in 3 cups milk or water for 5 minutes, stirring. It thickens on its own. Sweeten with jaggery or leave it savoury with salt and pepper.
Samai payasam — simmer in milk with jaggery and cardamom until it thickens, finish with ghee-roasted cashews. Ten minutes, no rice flour needed.
Poha — possible but handle gently. Rinse very briefly in a fine sieve, drain thoroughly, temper, fold in and cover off the heat for 90 seconds. Any longer and it collapses.
Upma — dry roast 2 minutes first, then 1 cup flakes to 1 cup hot water. Less water than any of our other flakes.
Curd flakes — soak in curd 5 minutes, salt, and temper.
For children — soak in warm milk and it mashes to a smooth porridge with no blending. Of our five flakes, this is the one that needs the least work.
The main thing: samai is the fastest-softening flake we sell. Halve the time you'd use for rice aval, and rinse in a fine sieve or you'll lose flakes down the drain.

A note on storage
Fine flakes take up moisture faster than coarse ones. Keep the pouch sealed, decant into an airtight jar after opening, and use within a few weeks. Two minutes dry roasting on a low flame restores crispness — go carefully, these are thin and catch quickly.
