What ragi flakes are
Whole finger millet is cleaned, steamed and passed through rollers that flatten each grain into a thin flake. Nothing is added and nothing is stripped — it's the same grain you'd cook from scratch, just pre-cooked and pressed so it rehydrates quickly.
Think of it as aval, but ragi instead of rice. Anything you'd do with poha works here.

Most people who buy ragi flour end up using it twice and forgetting it, because ragi mudde and koozh take planning. Flakes remove that friction. Hot milk, five minutes, done — which means it actually gets eaten instead of sitting in the back of the shelf.

How to use it
Milk bowl — soak 1 cup flakes in warm milk for 5 minutes, add jaggery or honey and chopped banana. The simplest breakfast on this list.
Ragi upma — rinse the flakes briefly and drain. Prepare your usual upma tempering with onion, chilli and curry leaves, fold the flakes in, cover for 3 minutes off the heat. Don't add water; the rinse is enough.
Ragi poha — exactly as you'd make aval poha. Rinse, drain, temper with mustard, turmeric, onion, peanuts and lemon.
Sweet aval — soak in milk, add jaggery, grated coconut and cardamom.
Porridge for children — soak in warm milk and mash, or blend for a smoother texture.
Overnight bowl — cover with milk or curd at night, refrigerate, eat cold with fruit in the morning.
Curd flakes — soak in curd for 10 minutes, salt, and temper. Good in summer.
The one rule: don't over-soak. Ragi flakes go soft quickly and turn pasty if you leave them sitting in liquid.

A note on storage
Flakes have far more surface area than whole grain, so they pick up moisture and go stale faster. Keep them sealed and airtight, and use them within a few weeks of opening. If they lose their crispness, a two-minute dry roast on a low flame brings them back.
